In Which I Don’t Believe In Zombie Jesus But I Do Believe In Brunch.

Growing up, I always believed in fairies and elves more than I believed in the story of Jesus.  Though I did attend church on occasion, and the belief in God and His son is the primary foundation of spirituality in my family, I was never forced into it.  For that I am forever grateful.  I was free to choose my own form of religion and to this day, I have my own brand of spirituality mashed together from different sources and it works well for me.  One thing I never bought though was the whole son of God thing.  I really hope I’m not offending any of my readers but, since Easter is all about Jesus coming to life and I’m doing an Easter post, I thought I should be honest.  Anyhoo, I don’t know why, but I just couldn’t believe that some guy named Jesus walked around and did a bunch of crazy things, was killed, then came back to life for no reason that I could understand with my child’s mind.  Because of that, the only reason I ever celebrated Easter was to get free chocolate. After I was too old to get an Easter basket I didn’t celebrate it at all unless my family put something together.  This year I celebrated Easter but only as an excuse to make brunch.

Brunch is something I can get behind.  I truly believe in the power of brunch.  It brings friends together, it is filled with delicious breakfast food, you can drink mimosas, and shove breakfast-y baked goods in your mouth until you’re so full you can’t move.  And afterwards, after filling yourself food and enjoying fine conversation with your pals, you get the rest of the day to slug about, read a book, go for a walk, whatever you want. Except work, because the power of brunch automatically gives you a free pass from work for the day.

In honour of brunch, here is my recipe for vegan blueberry pancakes. Enjoy!

1 cup flour

1 tablespoon sugar

2 teaspoons baking powder

1/8 teaspoon salt

1 cup soy milk

2 tablespoons vegetable oil

Sh*tload of blueberries

1 cup orange juice

Champagne.

1. Mix orange juice and champagne. Sip to check taste and set aside.

2. Combine the flour, sugar, baking powder,  and salt in a bowl.

3. Drink more mimosa.

4. Add soy milk, vegetable oil, and blueberries. Stir until mixed.

5. Heat a pan with some vegan butter over medium heat.

6. Try not to get distracted by what your friends are doing in the other room.

7. Spoon mix into the centre of the pan, flipping when you see bubbles appear. Best way to do this is to have the flipper in one hand and the mimosa in the other. Keeps you balanced.

8. Slather with maple syrup and stuff your face.
